Why do some cats have strange quirks like water taste, suddenly flop or eat plants?

I have a cat who will sit on the edge of the bath while the bath water is running and just stare at the water (I thought cats hated water ???). A Another quirk of my cat seems to have is suddenly "flop" as it plays the "stop, drop and roll" fire prevention old ads. What causes a cat suddenly flop?
